Ayurveda says that drumstick possesses curative value against as many as 300 diseases. Its leaves are rich in Vitamins A and C and prevent cataract.Drumstick seeds can purify water: 1 litre of contaminated water can be purified by just 150 mg of ground drumstick seeds. The gum from a drumstick tree, mixed with sesame oil, can treat ache or pain in the ears. Its flowers can be used as stimulants.
450 gms red pumpkin,
6 drumsticks; skinned and cut into 3-4 pieces,
2 green mangoes; skinned and chopped,
4 large red tomatoes;
skinned and chopped,
2 large brown onions; skinned and chopped,
1 large Kathiawari chilli;
cut into large squares (or green capsicum),
3 tbsps chopped fresh coriander leaves,
2 sprigs curry leaves,
1 tsp ginger-garlic paste,
1 tsp turmeric powder,
1 tsp Kashmiri chilli powder,
1 tsp Parsi Dhansakh Masala, salt and peanut oil
Cut the red pumpkin and boil it in salted water along with the turmeric powder. Boil the drumstick pieces in salted water till they become tender. Place the chopped onions in a pan along with one cup peanut oil on medium flame. When the onions soften, add the curry leaves and the large chilli squares, and mix together for two more minutes.Add the chopped tomatoes and mango pieces. Lower the flame and cook till the tomatoes are soft. Add the boiled pumpkin and crush it fine. Add water according to how thick you like your gravy to be.
Add salt for taste. Add the drained drumsticks and allow to simmer for seven minutes. Sprinkle with fresh coriander and serve along with vegetable khichdi.
